These are not your BBQ ribs of lore. But the flavor is absolutely delicious and so incredibly easy to prepare. I don’t mind tending a smoker to get that deep taste, but sometimes, I don’t feel like standing in the heat. That shouldn’t be a reason not to have pork ribs. Just try it.

SOFTWARE

·         1 slab of pork loin ribs (around 2.5 – 3 pounds)

·         2 T. cumin

·         3 T. garlic powder

·         2 T. smoked paprika

·         1 T. kosher salt

·         2 t. freshly ground black pepper

·         1 t. ancho chile powder

·         Your favorite sauce

METHOD

1.       Heat the oven to 275 degrees.

2.       Mix together all the spices.

3.       Trim away any fat from the ribs. Remove the membrane from the bone side.

4.       Place the ribs on a sheet of aluminum foil.

5.       Rub the spices on both sides, making sure to get the edges and ends.

6.       Fold the foil together and seal it.

7.       Place the rib package, meat side down, on a large baking sheet and put it in the oven.

8.       Bake for 2 hours.

9.       Open and flip the ribs, leaving the meat side up. Do not reseal the foil.

10.   Bake for 90 minutes.

11.   At this point, you can brush on some sauce and put them under a broiler for about 2-3 minutes. Do not let the sauce burn.

12.   Serve with some additional sauce on the side.

13.   Enjoy.

VARIANTS

As I said, these are not BBQ in the strictest sense, but they are so good. I prefer Sweet Baby Ray’s Honey Chipotle sauce to bring a little heat to the party. Use what you like. This recipe is for two … or one who is really hungry. It can be scaled up for more people.
