Griddled Crab Rangoon Cheese Sandwiches

Crab rangoons are my all-time favorite appetizer when I go out to eat. Crab and cheese just seem to go together. I wondered how my favorite filling would go in a grilled cheese sandwich. Oh, and this is a griddled sandwich after I watched Alton Brown argue that grilled cheese sandwiches do not contained actual grilled cheese.

SOFTWARE

·         8 oz. cream cheese, softened

·         8 oz. lump crab meat

·         1/4 t. garlic powder

·         1/4 t. onion powder

·         1 t. Old Bay seasoning

·         3 dashes of Worcestershire sauce

·         Your favorite sandwich style bread (I like sourdough)

·         Butter for cooking

METHOD

1.      In a medium sized bowl, mix the cream cheese, crab meat, garlic and onion powders, Old Bay, and Worcestershire sauce until creamy and well mixed.

2.      Heat a griddle over medium heat. If you are using an electric griddle, aim for 350 degrees.

3.      For each sandwich, butter one slice of bread and place it butter side down on the warmed griddle.

4.      Add 1/4 to 1/3 cup of the crab mixture on top of the bread, spreading to cover from edge to edge.

5.      Butter another slice of bread and place it butter side up on the crab mixture.

6.      Cook the sandwich for 3-4 minutes or until toasted. Flip and repeat the cooking.

7.      Move the fully toasted sandwich to a cutting board. Let it rest about 1 minute before cutting in half.

8.      Enjoy

VARIANTS

Yes, the crab mixture can be used to make actual rangoons. If you don’t have or don’t like Old Bay, substitute with some salt and pepper. If you don’t have actual crab, you could substitute with krab. Just don’t tell me.
