Burritos are one of the perfect foods. No, don’t ask me to list them all. They are packed with flavor, very customizable, and super portable. This one has my most favorite spice mix in the world – Old Bay. Seriously. Ask me about Old Bay and Ohio sometime.

Software

·         ½ c. mayo

·         1 T. siracha

·         ½ t. Old Bay

·         1 T. olive oil

·         ½ yellow onion, diced

·         1 T. garlic, minced

·         ½ t. chili powder

·         ½ t. cumin

·         1 lb. shrimp

·         1 c. cooked white rice

·         8 oz. can black beans, drained and rinsed

·         4 burrito sized tortillas

·         Pico, Mexican cheese, shredded lettuce, sliced avocado, sliced jalapeños, more Old Bay

Method

1.       Cook the rice according to package instructions.

2.       In a small bowl, mix together the mayo, siracha and Old Bay. Set aside.

3.       Heat up the oil In a large skillet over medium heat. Add the green pepper, onion and garlic. Sprinkle in the chili powder and cumin and stir, mixing the spices and vegetables together. Cook until the onions are just softened – about 3 minutes.

4.       Add the shrimp and stir, coating the shrimp with the spices and veggies. Cover and cook for about 4 minutes, stirring a couple of times while cooking.

5.       As the shrimp cooking, set up your assembly area.

6.       Warm up a tortilla in the microwave or a hot skillet and place on a plate. Add some rice and beans to the tortilla. Place the cooked shrimp on the rice and beans, then top with the other ingredients as you like.

7.       Roll up the burrito and grill either in a hot skillet or a grill press (much easier)

8.       Remove from grill onto plate and top with the mayo mixture. Sprinkle more Old Bay over the burrito.

9.       Grab a fork and knife. Unless you really like making a mess.
