Breakfast Tacos

Want something good without having to put a lot of morning effort into it? I got you covered.

Fans of #larryskitchen photos have seen the various ways I start off the day with breakfast tacos. They are very versatile, extremely quick to make, and a tasty way to wake up. Plus, it is a one pan dish, so clean up is a snap, which is very important when the coffee or tea hasn’t kicked in yet.

Software

·       2 T. butter, unsalted

·       2 eggs

·       2 flour tortillas

·       1 T. shredded cheese (your choice on the type and flavor)

Method

1.       In a medium skillet over medium heat, melt the butter until bubbling.

2.       Crack and add the eggs to the skillet, stirring until mixed.

3.       Let the eggs cooks, continuing to occasionally stir to scramble them.

4.       While the eggs are finishing up, place the tortillas in the microwave for 20 seconds.

5.       On a plate, assemble the tacos. Tortilla, cheese, egg. This should make two breakfast tacos.

6.       Add other ingredients (see variants below). Serve.

7.       Enjoy.

Variants

Additional ingredients can be just about anything you like. Cooked bacon or sausage. Hot sauces. Crispy hash browns if you feel so inclined. Diced tomatoes. The breakfast taco can be your canvas for so many flavor combinations. It all depends on how awake you are in the morning.
