Chicken Pesto Sandwich

It really does go well with Not Mom’s Potato Salad, also found on this site!

Chicken sandwiches always seem to have the most variety. You can do so many things with the bird and still have a great meal. While the spicy chicken sandwich on this site is a fan favorite, this version changes up the flavors for something really bold and easy. Check out the Variants for a burger change!

SOFTWARE

·       2 T. olive oil

·       4 chicken thighs

·       Salt and pepper

·       4 potato sandwich buns

·       4 slices of mozzarella

·       4 T. pesto (make your own or store bought)

·       Avocado, onion, tomato, pickles (all optional)

METHOD

1.       In a medium skillet over medium heat, warm up the oil.

2.       Season the chicken thighs with salt and pepper on both sides.

3.       Cook the chicken in the skillet for 4 minutes per side.

4.       When the chicken is done, toast the bun in a broiler or toaster to a light brown.

5.       Place the chicken on the bottom part and top with the cheese.

6.       Spread the pesto on the top part of the bun. Add any additional toppings you like.

7.       Enjoy!

VARIANTS

Different pesto flavors will give you a different taste. Experiment to see what works for you. If you prefer a burger instead, use 1 pound of ground chicken by forming into 4 patties. Cook for the same amount of time and load up the toppings.
