Creamy Goat Cheese and Tomato Sauce
Change the cheese in a sauce for pasta, and you could get a wildly different culinary experience. While spaghetti sauces usually get some variation of parmesan, this sauce utilizes goat cheese to create something creamy and flavorful. It sticks to the pasta so well.
SOFTWARE
· 2 T. olive oil
· 2 T. garlic, minced
· 28 oz. San Marzano whole tomatoes
· 3 T. Italian seasoning
· 8 oz. goat cheese
· 16 oz. spaghetti or other noodle like pasta
METHOD
1. In a large skillet over medium heat, warm up the olive oil.
2. Add the garlic and stir constantly for about 30 second to a minute or until the garlic becomes aromatic.
3. Add the tomatoes, including juices, and stir occasionally for about 10 to 15 minutes or until thickened. Break up the tomatoes as they cook.
4. While the sauce is cooking, prepare the pasta according to package directions. Save some of the pasta water after cooking.
5. Back to the sauce: Add the goat cheese and stir until it is completely melted. If the sauce gets too thick for your liking, add a little bit of the pasta water to thin it out, but do it in small steps.
6. You can mix the pasta into the sauce, or plate the pasta and ladle on the sauce.
7. Grind some freshly ground black pepper on top. A sprinkle of a hard Italian cheese. Enjoy.
VARIANTS
Try using this sauce with penne pasta and baking it. So good.
