Flash Sliders
I’m probably going to create controversy, but burgers are more of an All-American food than hot dogs. And what better way to satisfy that craving with tiny burgers that are quick to prepare but full of flavor. Sliders fit the bill and can be done in minutes.
SOFTWARE
· 1/4 white onion, diced (or run it through a food processor)
· 1# ground beef (85/15 if you can find it), cold
· Kosher salt and freshly ground black pepper
· 3 sliced American cheese, cut into 12 equal sized squares
· 12 slider rolls
· Condiments as you desire
METHOD
1. Heat an electric griddle to 370 degrees or a cast-iron skillet over medium heat.
2. Season the ground beef with salt and pepper.
3. Place the meat between two sheets of parchment paper. Using a rolling pin, form a rectangle 6x8 inches in shape.
4. Cut longways, dividing the meat into thirds. Cut shortways, dividing the meat into fourths. You should come away with 12 2x2 inch meat squares.
5. If you are going to cook the sliders later, place the cut pieces on a baking sheet and store in the fridge. Otherwise, let’s get cooking.
6. Place the meat on the griddle/skillet and cook for 90 seconds. Flip, place some onion on the burger, and add a piece of cheese. If you want your rolls warmed, now is the time to place the face down on the griddle. Cook for another 90 seconds.
7. Place the cooked burger on the bottom side of the bun. Top with whatever condiments you like. Add the top bun.
8. Enjoy.
VARIANTS
There really isn’t a lot to this. The variants come with your condiments. But keep in mind the size of the final burger. One slice of pickle should do the trick. A little bit of mayo/ketchup/mustard. Or go all out and do a double or triple burger. Just open wide.
