Green Eggs and Ham

You will eat them, Sam-I-Am. You will eat them on a box with a fox while wearing socks.

Inspiration for a dish can come from anywhere. Dr. Seuss’ tale of persistence and acceptance got me thinking about Green Eggs and Ham, and how would you make green eggs? The answer is simple and delicious. Next, what would Thing 1 and Thing 2 eat?

SOFTWARE

·         2 T. butter

·         4 oz. ham, diced

·         4 eggs

·         1 T. milk

·         1 T. pesto (jar is fine; if you want to make your own, check out the Variants section in the recipe)

·         Kosher salt

·         Freshly ground black pepper

METHOD

1.       Heat a large skillet over medium heat.

2.       Melt the butter until it is bubbling.

3.       Add the ham and cook for about 5 minutes, stirring occasionally.

4.       In a bowl, whisk together the eggs, milk, pesto, and seasoning.

5.       Add the egg mixture to the ham and butter.

6.       Scramble the eggs, stirring fairly constantly, until they reach your desired texture.

7.       Serve with hash browns or tots.

8.       Enjoy!

VARIANTS

If you really want to get fresh pesto, make it yourself. Mix together in a food processor the following ingredients: 2 c. fresh basil (packed), 2 oz. grated Romano cheese, 1/2 c. extra virgin olive oil, 1 T. minced, salt, pepper. Pesto goes great with eggs, pasta, meat, pretty much anything.
