Roasted Red Pepper and Cheese Egg Bites

Extremely portable. Easily reheatable (30 seconds in the microwave). Absurdly delicious.

When the world was “normal,” and I actually had a commute, I would often stop at my nearby coffee shop to get a beverage and an order of egg bites. Simple and easy to handle, they were a delicious diversion to the long time spent on the road. Working from home, my “commute” is much shorter, but these egg bites are better tasting and easier to get.

SOFTWARE

·         1/2 c. small curd cottage cheese

·         1/2 c. Pecorino Romano cheese

·         1/3 c. roasted red peppers, diced

·         4 eggs

·         1/4 t. ground pepper

METHOD

1.       Heat the oven to 350 degrees.

2.       Prepare a muffin pan with a little bit of olive oil in each container.

3.       In a medium bowl, mix together all the ingredients until well blended.

4.       Fill each muffin tin about 3/4 full. The mixture will grow in size while in the oven.

5.       Cook for 25 minutes.

6.       Remove from oven and cool for about 5 minutes. Yes, they will deflate. It is okay.

7.       Gently lift the egg bites from the tin.

8.       Enjoy

VARIENTS

Besides roasted red peppers, you could add scallions, diced green peppers, pretty much anything you could imagine in an omelet. Avoid cheeses that may produce oils when heated. Hard cheeses are the best.
