Sausage Gravy

Season with additional salt and pepper after tasting. The type of sausage used may already have salt in it, so use your tastebuds to gauge what you'll need.

There are some things that are just basic, comfort food. Meatloaf, potato salad, and casseroles all fall in this category. Sausage gravy is also one of those dishes that just feels like a cozy blanket of deliciousness.

SOFTWARE

·         1 lb. ground sausage

·         1 to 2 T. butter

·         3 T. flour

·         2 c. milk

·         Freshly ground black pepper

 

METHOD

1.      Place the ground sausage in a cold skillet. Put the skillet over medium heat and cook the sausage until it is no longer pink.

2.      Remove the sausage from the skillet to a bowl, leaving behind any liquid fat.

3.      Add enough butter to the fat to get about 3 tablespoons.

4.      Sprinkle in the flour and whisk until everything is absorbed.

5.      Carefully, add the milk while whisking to bring everything together.

6.      Bring to a simmer and cook until thickened. Keep whisking to prevent burning.

7.      Add as much pepper as you like.

8.      Stir in the sausage and cook for another minute.

9.      Serve as you like.

VARIANTS

Yes, this recipe works just as well with chorizo and results in a spicier gravy. You can use this over biscuits, toast, fried potatoes, egg noodles, or just eat it with a spoon.
