Spicy Red Onion Sauce
A new discovery can lead to something amazing. I had no idea that Tabasco made a pepper jelly and that it was so delicious. I wanted to make a glaze for chicken, but it turned out more like a sauce. No matter. I also used it on my scrambled eggs the next morning. Yep, it is that good.
SOFTWARE
· 3 T. olive oil
· 1 red onion, large, minced
· 1 t. Kosher salt
· 1/2 t. freshly ground black pepper
· 2 t. rice vinegar, unseasoned
· 1/2 c. orange juice
· 3 T. Tabasco pepper jelly
METHOD
1. In a medium saucepot over medium heat, warm up the oil.
2. Add the onion and cook for about 5-7 minutes or until they start browning. Stir very occasionally during the cooking process.
3. Season with salt and pepper.
4. Add the vinegar, orange juice, and Tabasco pepper jelly.
5. Cook until the jelly completely melts, and the sauce begins to thicken.
6. Serve over whatever you like.
7. Enjoy.
VARIANTS
I originally served this on top of baked chicken, but it was just as good on scrambled eggs the next morning. I think it might make a good pizza topping as well. Let me know what you put it on. By the way, I was eating the pepper jelly with pretzels, and it is my new favorite snack now.
